Mrs. Nina Bernice Ackah, a Research Scientist at the Food Research Institute, FRI has observed that a lot people die as a result of food poisoning which are caused by certain activities such as microbiological hazards, chemical hazards, physical hazards and food allergies.
Speaking on the Food Safety, Nutrition and Hygiene segment of the morning show on Tuesday, Madam Ackah told host of the show, Nana Ama Sarfo that several deaths arise out of food poisoning which is caused by more than 250 different diseases which are infections caused by certain bacteria.
According to her, these diseases are normally generated by bacteria which are caused by certain activities such as food allergies, chemical hazards, microbiological hazards and physical hazards.
Explaining the phenomenon of food allergy, the research scientist explained that food allergy is the situation where a certain food type may be good for somebody but may not be good for another person. This, she explained ends up creating some discomfort for the consumer.
On chemical hazards as a means of food poisoning she explained that it is the situation where people add chemicals to food for its preservation or add real poison to food substance which affects the consumer.
‘Physical hazard also refers to the physical swallowing of pieces of bones of fish and animals that end up damaging the esophagus,’ madam Ackah explained while also explaining that micro biological hazards are micro bacteria organisms that cannot be seen by the eye and which come about as a result of improper handling of food raging from its preparation to its preservation.
She therefore warned against eating of food whose taste is different from its original taste. She also identified change in food colour and scents as ‘clear signals of food poisoning.’
