Ensure Clean Hands in Food Preparation

Mrs. Nina Bernice Ackah, a Research Scientist of the Food Research Institute has cautioned the general public on how to properly involve the human hand especially in food preparation and consumption. This according to her is due to the fact that the hand is most of the time unhygienic, a situation which most of the time arises due to the fact that the human hand often makes contact with microorganisms which are present in the air and easily gets contact with the hands.

Madam Nina Ackah stated this when she appeared as guest on Rite FM’s Food Safety, Nutrition and Hygiene show hosted by Nana Ama Sarfo.

She explained that using contaminated hands to handle food could also result in the food going bad.

‘Microorganisms occur naturally and so if we use our bare hands to handle food, it introduces the organisms and this can cause food spoilage. It is therefore advisable to handle vegetables before meat when cooking because raw meat and raw fish contain a lot of proteins which also contain microorganisms,’ Madam Ackah reiterated.

She also advised parents, food vendors and food operators, to use cooking utensils like ladles, spoons and forks to serve foods such as salad, spaghetti etc rather than using the hands in serving sinced because the hands is also used for collecting money from the buyers.
